Jamaican Pumpkin Dumpling
- Puree 1 cup diced pumpkin and 1 clove garlic with 1/4 cup water. (a little more might be needed)
- Measure 3 cups flour and 1 tsp salt (1 tbsp butter optional)
- Pour pumpkin mixture into flour and knead.
- Allow the dough to rest for 5 minutes.
- Set 8 cups water to boil with 1 tsp salt.
- Shape dumplings as you like or in the traditional hamburger shape and place in boiling water.
- Allow to cook uncovered for 15 minutes.
- Serve as desired with your favorite protein and and vegetables.
