Jamaican Rum Punch

A wedding, funeral or any Jamaican celebration is not complete without Rum Punch.




1 part sour, 2 parts sweet, 3 parts strong and 4 parts weak.

  1cup Fresh lime
  2 cups Brown Sugar/Syrup
  3 cups White / Gold (Appleton) Rum
  4 cups Ginger/Cream Soda or tropical fruit juice (use less sugar if using fruit juice)
  Crushed ice

To Serve
  Angostura bitters, Freshly grated nutmeg, slice of lime, orange or fresh pineapple, Maraschino cherries.

Directions

Mix all the punch ingredients in a bowl and chill. Serve in glasses and finish up each drink with a few dashes of bitters, nutmeg, lime slice, orange or pineapple and the traditional cherry on top. It gets better by the hour so make it ahead and keep refrigerated.

 The easiest way to remember the recipe for traditional rum punch is - 1-2-3-4.
1 part bitter (lime juice)
2 part sweet (syrup -Strawberry Syrup )
3 parts rum (Wray & Nephew White Over-proof is the ONLY rum to use, but you may want to use a little less if you want to take it down a bit)
4 parts mix (white cream soda, sprite, or 7-up work really well)

Jamaican Breeze


Ingredients:

1.5 oz. Appleton Estate Reserve Rum
1 Slice Fresh Ginger – Muddled
0.5 oz. Simple Syrup (1-1 Sugar to Water)
Dash of Angostura Bitters
Garnish: Lime Wheel

Glass:

Rocks

Preparation:

Muddle ginger in a pint glass.
Add remaining ingredients and ice.
Shake and strain into a rocks glass over fresh ice and garnish with a lime wheel.

Jamaican Christmas Sorrel


This is a must for Christmas in Jamaica
8 cups sorrel petals                             
2 ounces grated ginger                        
12 cups boiling water
Rum                                                    
Sugar
Place sorrel and ginger in a large container and pour on the boiling water. Cover and leave overnight, then strain through a muslin cloth or a sieve. Add a little rum to preserve and sugar to sweeten. Bottle and refrigerate.
