Fried Yeast Bread

These are popular in Guyana and Trinidad but not in Jamaica (they should be). These are basically a fried dumpling with yeast. I like the fact that they puff up and stay puffed like a pita bread. They can be filled or not and eaten however you like.
I even find them to have a slight doughnut taste. I think a little vanilla glace icing will be delicious on them.



Fried Yeast Bread



Prep time: 30 minutes
Cook time: 15 minutes
Total time: 45 minutes
Yield: 12

Ingredients
3 cups all purpose flour
2 tsp sugar
3 1/2 tsp yeast
1 1/2 tbsp butter or oil
1 1/2 tsp salt
1 cup water, warm
2 cups oil, for frying

Procedure
  1. Combine yeast, sugar, warm water in large bowl. Let sit for 5 minutes
  2. Add other ingredients except 2 cups oil.
  3. Knead into a smooth pliable dough. If it is too firm add a little water.
  4. Leave dough in bowl. Cover with damp clean towel.
  5. Allow to stand for 20- 30 minutes until doubled in size.
  6. Portion into golf ball sized pieces. Heat oil in frying pan.
  7. Roll dough into 1/8-1/4 inch thickness.
  8. Fry in oil. When it puffs up, turn and fry on other side. Remove and drain an paper towel.
