1/2 cup chopped ripe mango 1/2 onion chopped 2 garlic cloves chopped 1 inch ginger sliced 2 tbsp sugar 1/4 cup vinegar 1 cup water 1 tbsp soy sauce In a small sauce pan combine the mango, water,
vinegar, soy sauce and sugar. Bring to boil then
simmer until mango is very soft.
Add your chopped onions, garlic and sliced ginger.
Puree the sauce.
Strain the mango sauce into the pan using a spoon to run through the sieve. Some of the mango may stick
to the bottom of the sieve, use the spoon to scrape it
into the pan. Discard the mango fiber.
Stir and bring the sauce to a boil then simmer for
about 5 minutes.
