Jamaican Banana Flittas (Fritters)

I can often recall many Sunday morning when my mom would make Banana "Flittas" as we Jamaicans call them. I loved the aroma that delicious banana taste and the nice crunchy edges. Its a Jamaican favorite and every "Granny" will have her own version. This is a nice way to use those bananas that are a bit soft.
Over ripe bananas

You will need
2 ripe bananas, mashed
1 cup all purpose flour
4 tbsp sugar
1/8 tsp baking soda
1/4 tsp salt
1/8 tsp cinnamon
1 tbsp oil
1/8 c milk
Vegetable oil, for frying
1/2 cup Cinnamon sugar

Sift together the flour, sugar, salt,cinnamon and baking soda. Add bananas, oil and milk; beat until batter is smooth. Drop by teaspoonfuls into deep hot oil -- about 370° and at least 2 1/2 to 3 inches deep -- and fry for about 2 to 3 minutes, until nicely browned.
Drain well on paper towels then roll in cinnamon sugar while still warm. Serve as is or warm, with syrup, if desired.
