Jamaican Curry Sauce

CURRY SAUCE



1 small onion
3 cloves garlic
1  tablespoon curry  powder
2 tablespoons coconut or vegetable oil
2 1/2 tablespoons flour
1 cup water or chicken/vegetable stock
Sprig thyme
1 hot pepper, whole
1 cup coconut milk
Salt and pepper to taste

Procedure
1. Peel and slice the onion and garlic, cook in the fat until onions are tender but not brown.
2. Add curry powder and flour and blend till
smooth.
3.  Gradually add stock, hot pepper and thyme. Simmer.
4. Add milk, and salt and pepper to taste.
Serve with fish, hard-boiled eggs, left-over meat or vegetables.
Yield: 2 cups
